Ingredients

  • 2 tablespoons sugar
  • 2 teaspoons cinnamon, divided
  • 6 (6 inch) corn or whole wheat tortillas
  • 1 (15 ounce) can crushed pineapple, drained
  • 1 apple, cored and chopped
  • 2 teaspoons honey or maple syrup

Instructions

  1.  Position oven racks in the middle and bottom. Preheat the oven to 425°F. In a small bowl, combine the sugar and 1 teaspoon cinnamon.
  2.  Stack the tortillas and cut into 8 triangles. Arrange the tortilla triangles on two baking sheets and bake until golden brown, about 10 minutes. Flip and sprinkle with the sugar mixture. Bake until golden brown, about 5 minutes.
  3.  In a bowl, combine the pineapple, apple, honey and the remaining teaspoon of cinnamon. Serve with tortilla chips.

Make it Vegan: Use maple syrup instead of honey.
