Ingredients
- 1 teaspoon oil
- 1 cup oats
- ½ cup low-fat milk
- 2 eggs
- 1 cup plain Greek yogurt
- ½ cup sugar
- ½ teaspoon vanilla
- 3 ripe bananas, mashed
- 1 ½ cups whole wheat flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- ½ teaspoon cinnamon
- ¼ teaspoon salt
- Optional: ⅓ cup semi-sweet chocolate chips and/or ⅓ cup walnuts
Instructions
- Preheat oven to 400°F. Lightly grease a 12-cup muffin tin with the oil.
- In a large bowl, mix the oats, milk, eggs, Greek yogurt, sugar, vanilla, and mashed bananas. Let the mixture sit for at least 10 minutes.
- In a medium bowl, mix the flour, baking powder, baking soda, cinnamon, salt and optional chocolate chips and/or walnuts. Add the dry mixture to the banana mixture and stir until combined.
- Spoon the batter into the prepared muffin cups, filling each ¾ full. Bake until golden brown and a toothpick inserted in the center comes out clean, about 15 to 18 minutes.
