Ingredients

  • 1 teaspoon oil
  • 1 cup oats
  • ½ cup low-fat milk
  • 2 eggs
  • 1 cup plain Greek yogurt
  • ½ cup sugar
  • ½ teaspoon vanilla
  • 3 ripe bananas, mashed
  • 1 ½ cups whole wheat flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • Optional: ⅓ cup semi-sweet chocolate chips and/or ⅓ cup walnuts

Instructions

  1. Preheat oven to 400°F. Lightly grease a 12-cup muffin tin with the oil.
  2. In a large bowl, mix the oats, milk, eggs, Greek yogurt, sugar, vanilla, and mashed bananas. Let the mixture sit for at least 10 minutes.
  3. In a medium bowl, mix the flour, baking powder, baking soda, cinnamon, salt and optional chocolate chips and/or walnuts. Add the dry mixture to the banana mixture and stir until combined.
  4. Spoon the batter into the prepared muffin cups, filling each ¾ full. Bake until golden brown and a toothpick inserted in the center comes out clean, about 15 to 18 minutes.
