Ask Jodi: Black Bean Quesadillas

Ingredients
Serves 8
Whole wheat tortillas (package of 8)
3 cups black beans
1 1/2 cup shredded cheddar cheese
1 cup corn
1 cup tomatoes
2 Tablespoons chili powder
Heat oil in large skillet over medium high heat. In a large bowl or sealed plastic bag, mash beans. Mix beans with salsa, cheese, and cilantro. Place 1/ 3 cup bean mixture on half of tortilla shell. Fold tortilla to make a half moon shape and pat down filling so it is evenly distributed. Repeat until all filling is used up. In small batches, cook quesadillas until golden brown and flip to cook other side.
