Sweet Potato, Apple, Onion Hash

Some healthy and tasty eats are cooking up in the Food Bank Virtual Kitchen!
This week, Volunteer Chef, Danielle Turner of Cooking Clarified cooked up a Sweet Potato, Apple, Onion Hash at the Top Shelf Training, to show partner agencies healthy and economical ways to prepare fruits and vegetables commonly found at the food bank.
This Sweet Potato, Apple, Onion Hash is a great way to “Get Your Plate in Shape,” as it is filled with orange veggies, fiber, and satisfying flavors that span the sweet and the savory.
A versatile recipe, the dish is great with grilled chicken or eggs, tossed into a soup or rolled into a whole grain tortilla.

Sweet Potato, Apple, Onion Hash
Serves 6 as a Side Dish
Ingredients
1 Tablespoon butter
1 Tablespoon olive oil
2 medium sweet potatoes, peeled and diced (about 4 cups)
1 large onion, diced (about 2 cups)
2 cups sliced mushrooms (optional)
1 medium apple, peeled and diced (about 1 cup)
Salt and pepper, to taste
Directions
Heat butter and oil in a large sauté pan over medium high heat until butter melts. Add sweet potatoes and cook, stirring occasionally, until they begin to brown, about 5 minutes. Stir in onions and cook until onions begin to soften, about 5 minutes. Add mushrooms, if using apples, cook until apples and potatoes are fork-tender, about 5-6 minutes.
Season to taste with salt and pepper.
