Ingredients
- 1 tablespoons oil
- 1 medium onion, diced
- 1 teaspoon garlic, minced
- 4 cups vegetable broth, low sodium
- 1 (14.5 ounce) can diced tomatoes, no salt added
- 1 tablespoon Italian seasoning
- ½ teaspoon salt
- 1 teaspoon black pepper
- 2 (15 ounce) cans white beans, no salt added, drained and rinsed
- 1 (13.5 ounce) can spinach, no salt added, drained
- Optional: Parmesan cheese, parsley and red pepper flakes
Instructions
- Heat oil in a large saucepan over medium heat. Add onion and cook until soft, about 5 minutes. Add garlic and cook until aromatic.
- Add broth, tomatoes, Italian seasoning, salt and black pepper. Bring to a boil and then reduce to a simmer for 15 minutes.
- Add white beans and spinach and continue to simmer for 5 minutes. Add optional Parmesan cheese, parsley or red pepper flakes.
Shopping Tip: Choose low salt/no salt added canned foods. If not available, draining and rinsing can reduce the salt content up to 40%!
