Ingredients

  • 1 large head of cauliflower, green leaves removed
  • 1 teaspoon salt
  • ½ cup flour
  • 2 eggs
  • ½ cup shredded cheese
  • 1 tablespoon oil
  • Optional: black pepper, garlic, onion powder, paprika, chili, etc.

Instructions

  1. Place whole head of cauliflower in a large pot, cover with water and boil over high heat for 10-15 minutes until tender, then drain. Allow to cool.
  2.  Mash the cauliflower in a large bowl. Add salt, flour, eggs, cheese and optional spices. Mix until combined.
  3. Heat oil in a large pan over medium-high heat. Divide mixture into ¼ cup fritters and fry until golden, about 3 minutes each side. Serve warm.

Nutrition Boost: Add shredded carrots, onions, zucchini or other vegetables. For every additional 1 cup of vegetables, add 2 more tablespoons of flour.
