Ingredients

  • 1 tablespoon oil
  • 1 medium onion, chopped
  • 1 bell pepper, chopped
  • 1 (15 ounce) can black beans, no salt added, drained and rinsed
  • 4 eggs
  • 4 (10 inch) whole wheat tortillas
  • Optional: your favorite spices

Instructions

  1. Heat oil in a pan and sauté onions, peppers and optional spices on medium high heat until soft, about 5 minutes. Add the black beans and sauté for 1 minute. Push the vegetable mixture to the side of the pan, add eggs, and scramble.
  2. Divide the mixture evenly among the tortillas.
  3. Add desired toppings and wrap into burritos.

Nutrition Boost: Add your favorite canned, fresh or frozen vegetables. Mushrooms, spinach, kale, corn and tomatoes all work!

Try this! Top with salsa, avocado, jalapenos or shredded cheese for more flavor.
