Black Bean and Corn Salad

Ingredients

  • 1 (15-ounce) can no-salt-added black beans, rinsed and drained
  • 1 (15-ounce) can no-salt-added corn, drained
  • 1 small bell pepper, ribs and seeds removed, chopped
  • ½ red onion, chopped
  • 2 tablespoons chopped fresh cilantro leaves
  • 1½ teaspoons ground cumin
  • 2 tablespoons vegetable or olive oil
  • Juice of 1 lime
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Place the beans, corn, peppers, onions, cilantro, and cumin in a large bowl. Mix to combine.
  2. In a small bowl, whisk together the oil, lime juice, salt, and pepper.
  3. Pour the dressing over the vegetables, and mix well.
  4. Let sit for 15 minutes to allow the flavors to come together.
