Ingredients
- 2 tablespoons oil
- Juice of 1 lime (or 2 tablespoons lime juice)
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 1 ½ teaspoons cumin
- 1 (15 ounce) can black beans, no salt added, drained and rinsed
- 1 (15 ounce) can corn, no salt added, drained and rinsed
- 1 small red pepper, chopped
- 1 small or ½ large red onion, chopped
- 2 tablespoons fresh cilantro, chopped
Instructions
- In a large bowl, whisk the oil, lime juice, salt, black pepper and cumin.
- Add the beans, corn, peppers, onions and cilantro. Mix to combine.
- Eat as is or serve with veggies, pita chips, or as a side.
Ingredient Swap: Any beans will work! Try red, pinto or kidney.
