Ingredients

  • 2 tablespoons oil
  • Juice of 1 lime (or 2 tablespoons lime juice)
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 ½ teaspoons cumin
  • 1 (15 ounce) can black beans, no salt added, drained and rinsed
  • 1 (15 ounce) can corn, no salt added, drained and rinsed
  • 1 small red pepper, chopped
  • 1 small or ½ large red onion, chopped
  • 2 tablespoons fresh cilantro, chopped

Instructions

  1. In a large bowl, whisk the oil, lime juice, salt, black pepper and cumin.
  2. Add the beans, corn, peppers, onions and cilantro. Mix to combine.
  3. Eat as is or serve with veggies, pita chips, or as a side.

Ingredient Swap: Any beans will work! Try red, pinto or kidney.

Shopping Tip: Choose low salt/no salt added canned foods. If not available, draining and rinsing can reduce the salt content up to 40%!

Reduce Food Waste: When using fresh soft herbs, use the stems, too – they have the same flavor as the leaves with added crunch!
