Ingredients

  • 2 tablespoons oil
  • 1 clove garlic, minced
  • ½ medium red onion, diced
  • 1 teaspoon ginger, minced
  • 2 teaspoons turmeric, divided
  • 1 teaspoon cumin
  • 1 teaspoon black pepper
  • 3 medium carrots, diced
  • 1 medium potato, peeled and diced
  • ½ medium cabbage, finely chopped
  • ½ cup low-sodium vegetable broth or water
  • 1 teaspoon salt

Instructions

  1. Heat oil on medium heat in a large fry pan. Add onion and sauté until soft, about 5 minutes. Add garlic, ginger, turmeric, cumin and black pepper. Sauté for 30 seconds or until aromatic.
  2. Add carrots, potatoes, cabbage, broth or water, remaining turmeric and mix well. Reduce heat to medium low, cover and cook until vegetables are easily pierced by a fork, about 10 minutes.
  3. Season with salt. Serve with Ethiopian injera, rice or bread.
