Ingredients
- 2 tablespoons oil
- 1 clove garlic, minced
- ½ medium red onion, diced
- 1 teaspoon ginger, minced
- 2 teaspoons turmeric, divided
- 1 teaspoon cumin
- 1 teaspoon black pepper
- 3 medium carrots, diced
- 1 medium potato, peeled and diced
- ½ medium cabbage, finely chopped
- ½ cup low-sodium vegetable broth or water
- 1 teaspoon salt
Instructions
- Heat oil on medium heat in a large fry pan. Add onion and sauté until soft, about 5 minutes. Add garlic, ginger, turmeric, cumin and black pepper. Sauté for 30 seconds or until aromatic.
- Add carrots, potatoes, cabbage, broth or water, remaining turmeric and mix well. Reduce heat to medium low, cover and cook until vegetables are easily pierced by a fork, about 10 minutes.
- Season with salt. Serve with Ethiopian injera, rice or bread.
