Ingredients
- 4 tablespoons oil
- 2 tablespoons vinegar
- ½ teaspoon dried oregano
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 1 pound Brussels sprouts, halved
- 1 pound red potatoes, quartered
- 1 onion, cut in chunks
Instructions
- Preheat oven to 400° F. Whisk the oil, vinegar, oregano, salt, and black pepper together in a small bowl.
- Toss Brussels sprouts, potatoes and onions with half of the oil and vinegar mixture. Place on baking sheet.
- Bake for 30 minutes or until browned, stirring the vegetables halfway.
Remove from the oven and drizzle remaining oil and vinegar mixture on top.
